Best Pancakes Ever

I have to admit, I've got a bit of an obsession with pancakes. 
I love them, and have been playing around with different styles (Swedish, Buttermilk, etc.) for a long time. 
In general, I throw together my ingredients depending on what I'm in the mood for on a particular pancake breakfast day. On the day that this recipe was created, I had my heart set on pancakes, just to find out I was all out of milk. So, I improvised! Thus was born "The Best Pancakes Ever"! Well, in my opinion at least.

This recipe will make about 16 6" pancakes.

8 tbs melted butter
8 eggs
1 cup plain yogurt
2 cups water
3 cups all purpose flour
2 tsp salt
2 tsp honey

In a small sauce pan, over low heat, melt butter. Set aside to cool.
In a large bowl, add eggs, yogurt, water, and honey. Blend with electric mixer until smooth.
Add melted butter to egg/yogurt mixture slowly, while mixing.
In a separate bowl, sift together flour and salt.
Add dry flour to egg mixture a little at a time, while mixing, until all is incorporated and smooth.
Grill, and serve!
